Plantains are highly nutritious, rich in potassium, fiber, Vitamins A & C. They are rich sources of B-complex vitamins, particularly high in vitamin-B6 (pyridoxine). Pyridoxine is an important B-complex vitamin that has a beneficial role in the treatment of neuritis and anemia.

Plantains are a type of resistant starch, which is a type of starch that is not digested in the stomach or small intestine, reaching the colon intact. Thus, it “resists” digestion. This explains why we do not see spikes in either blood glucose or insulin after eating RS.

Resistant starch selectively stimulates the good bacteria in our intestines, helping to maintain a healthy balance of bacteria. Several studies have shown that RS may improve insulin sensitivity, and decrease blood glucose levels in response to meals. In one study, consumption of 15 and 30 grams per day of resistant starch showed improved insulin sensitivity in overweight and obese men, equivalent to the improvement that would be expected with weight loss equal to approximately 10% of body weight.

Wow! I would have never imagined that my favorite chip has so many benefits. Especially, since I’m vegan foods with B-complex vitamins is a need for me. Thank you!

Plantains also contain more potassium than bananas. Potassium is an important component of cell and body fluids that helps control heart rate and blood pressure, countering negative effects of sodium.
To be honest, the plain sweet plantain chips was never my favorite growing up, but it is now. The naturally sweet plantain chips has a light sweetness that is not offensive. My new favorite!
